I usually eat a plain waffle in the morning for breakfast. I'm not big on sweets in the am since I started cutting back on carbs over a year ago. This recipe, however, caught my attention because I love indulging in chocolate chip pancakes as a sweet treat every once in a while. The chocolate chip waffle version can work for breakfast or as a dessert topped with your favorite flavor of ice cream. Here is a recipe I found on mrbreakfast.com. Change the amount of chocolate chips in the receptive to suit your taste, adding more or less as needed. Add in white or dark chocolate if you prefer this type over the regular milk variety.
Things You'll Need:
- 1 and ¾ cups of all-purpose flour
- 2 teaspoons of baking powder
- 1 tablespoon of sugar
- ½ tablespoon of salt
- 3 egg yolks (beaten)
- 1 and ¾ cup of milk
- ½ cup of vegetable oil
- 3 egg whites (beaten)
- 2 cups of chocolate chips
- Mix together all of your dry ingredients, including the chocolate chips.
- Combine your egg yolks and milk, then stir into your dry ingredients.
- Add the oil into your mix and stir.
- Fold in the beaten egg whites, taking care not to over mix them with your other ingredients.
- Pour the mixture slowly into your waffle iron and cook, following the directions listed for your waffle iron.
Tip:
One way to tell that your waffles are ready is to watch for steam coming out of the side of your waffle iron.
